Ingredients: (for a small cake mold- about 10 cm diameter)
70 Grams oats or oat flour
65 Grams of all purpose flour
1 tsp baking powder
80 grams liquid coconut oil, or melted butter (100 grams)
1 tsp cinnamon
15 grams honey
2 medium bananas (about 200 grams)
30 grams walnuts
Mix flour, oats and baking powder in one bowl.
Mash the bananas
Add the egg, honey, coconut oil to the banana mash and mix well.
Add the flour, oats, baking powder mix to this and mix well again. If you do not have oat flour, you can use regular oats and turn them to flour with a food processor.
Finally add the walnuts to the mix.
Pour it on a cake mold with parchment paper and bake at 180 degrees for about 40 minutes. Using a toothpick, perforate the center of the cake. If it comes out clean, then it's ready. Otherwise, leave for another 5 to 10 minutes.
