50 grams turkey ham (you can use other protein source here, such as tuna, chicken, chickpeas or beans)
Put the quinoa in a pan with 250 ml of water (with salt). Once it is boiling, let it cook for 15 minutes and set aside.
Set the oven to 200 degrees and prepare an oven tray with parchment or aluminum foil paper.
Dice the eggplant and carrots. Chop the celery.
In a large bowl, place a tbsp olive oil, salt and paprika to taste. You can add other spices like oregano or pepper which go well with the vegetables.
Add the diced eggplant and carrots to the bowl with the spices. Toss to mix well and place the veggies on the oven tray. Bake for 15-20 minutes. Then set aside.
In a salad bowl, place the mixed greens and add a pinch of salt. Mix well. Then add the celery, crumbled feta, cooked quinoa and grilled vegetables. Add a tbsp of balsamic vinegar and toss well to combine all.
