Spinach pancakes

Ingredients
  • A bunch of spinach (I had about 150 grams left)
  •  2 eggs
  • 90 grams oats or oat flour
  • Salt to taste

Method
  • Mix all with a food processor or blender
  • Heat a pan and cook like pancakes! If you don't have a non-stick pan, you can use a bit of oil or butter so the mixture doesn't stick to the pan.

They will come as thick pancakes so I used mine to make a sandwich! I added turkey ham and cheese in this case

Fruit Salad with a twist

​Ingredients:
  • 2 oranges
  • 1 apple
  • 1 pear
  • 45 grams walnuts
  •  25 grams coconut flakes

Method:
  • Juice one orange. Keep the juice in a medium bowl
  • Peel and dice the other orange. Add to the bowl
  • Peel, seed and dice the apple and the pear. Add both to the bowl
  • Roughly chop the walnuts and add to the bowl, together with the coconut
  • Mix well and enjoy!
